Sweetcorn Muffins – Contributed by Cathy Keats

This recipe is for my beautiful daughter who as a young girl would come home from school and eat a tin of sweet corn for lunch (out the tin). So this is for you darling, its quick and easy.You will need:

1.5 Cups of flour
15ml Baking Powder
2ml Salt
60ml Sugar (Castor Sugar is good)
125ml milk
250ml Creamstyle Sweet corn
1 egg beaten
50g melted butter
125ml grated cheddar cheese

Combine dry ingredients
Combine wet ingredients
Mix the two together and place spoonfuls into a greased muffin pan. Bake for 12minutes on 210°
…………and voila! delish sweetcorn muffins for anytime munchtime
